A few days ago about 150 avocados landed in my life. Within 24 hours, the majority of them were ripe, and the rest soon followed. I’ve been handing them out to whomever will take them, as well as freezing them and trying out all sorts of new recipes to ingest them as rapidly as they’re ripening! Because pretty much everything with avocado is awesome, I thought I’d share some deliciousness I’ve discovered :)
The majority of these will need: a food processor/blender, and TONS of avocados
First, the basics:
Guacamole serves 4. or 2 with munchies.
3 large, ripe avocados pitted
3 cloves of garlic, minced (about 1 tbsp)
1-3 tomatoes, depending on size and how much you love tomatoes
1 small onion, diced
1 large lime
finely chopped fresh cilantro, about 2 tbsp
salt and black pepper to taste
Optional: 4 tbsp sour cream, for creamier texture
-Scoop avocado meat into a large bowl and smush with a fork until you have the consistency you want.
-Throw in all the other ingredients and mix together. Squeeze the lime juice in and mix thoroughly.
-Serve cold, warm, and with anything :)
If you have a massive avocado influx on your hands (as I do at the moment), freezing them is an awesome way to have fresh avocados for 3-5 months after season ends. It’s quite easy as well!
All you need is: as many avocados as you want, a container that will fit them all once processed, and a bunch of limes or lemons (I use limes, as lemons don’t exist in Nicaragua)
Put the avocados in a food processor with about 1 small lime’s worth of juice per medium sized avocado (more is always alright as well, depending on your taste). Process until smooth and put in airtight container. Freeze immediately.
Great on sandwiches, toast, for guacamole, dip, and more of the recipes that follow!
Now on to the fun stuff!!
Avocado breakfast smoothie recipe is per serving
1 small avocado, pitted
1 medium-large banana
3/4 cup soy milk and juce of 1/2 lime -OR- 3/4 cup of regular milk (lime will curdle regular milk. another option would be using water or orange juice with a little lime)
Optional: sugar or honey, to taste (the bananas will bring a natural sweetness to it, but some people like it sweeter!
Optional: Other fruit (strawberries, coconut
Optional: Granola for topping
-Blend avocado, banana, milk/water+lime/soy+lime, and sugar/honey until smooth. Top with granola and serve in a large-mouth glass to be drank or eaten with a spoon!
Fresh Avocado Pesto makes about 1-2 cups of pesto, depending on size of avocados. Super creamy and delicious! A great vegan alternative to an Alfredo-type sauce for pasta.
2 medium avocados, pitted
1/2 cup of fresh basil, chopped
3 large cloves of garlic, minced
1/4 cup olive oil
1 small onion, diced
salt and pepper to taste
-Process basil, olive oil, garlic and onion together until well blended. Add avocados and process until smooth. Add salt and pepper, and process until thoroughly blended. Enjoy with pasta, risotto, chicken, fish, cheese and crackers, etc!
Deep fried Avocado wedges makes 5-8 wedges ( 2 servings) per avocado
Avocados, cut into wedges (not too thin, about 5-8 per avocado)
Egg bath: 4 eggs beaten with a little milk and a pinch of salt/pepper
1-2 cups of flour, for coating
1-2 cups of cornmeal, for coating
Vegetable oil for frying
- Prepare egg bath in a small bowl. Put flour in a small bowl, and corn meal in another bowl.
-Heat up oil, enough to completely cover the wedges with submerged
-Dredge wedges in flour first, then the egg bath, then the cornmeal coating.
-When the oil is very hot and bubbling, put the coated wedges in. Fry until golden brown, about 30 seconds-1 minute.
-Serve with salsa, chutney, ketchup, or another sauce of your choosing!
Avocado Chocolate Mousse 1 serving (per avocado). Vegan, but doesn’t taste it!
1 ripe avocado, pitted
1/4 cup sugar (or a bit more if you like it sweeeeeet!)
1/4 cup cacao powder
3 tbsp water
2 tbsp strawberry jam
Optional: 1/2 small banana, for a little extra flavor
-Blend all ingredients in food processor until smooth and creamy. Serve immediately or chilled. Awesome with a little whipped cream or fresh berries!
